You will need
2 tranches of bacon, dice cut (it's the smokiness you are really after here, so search either double smoked bacon or smoked Applewood. Two bands is a lot to infuse this whole dish.)
4 shallots, chopped, green and white white
1 pepper red, chopped
2 ears of husked corn, the cores removed from COB
2 cups baby frozen lima beans, thawed
Black salt and pepper
1/4 cup of half-half
How to do it
- Cook the bacon in a large medium heat pan until brown and crisp, about 5 minutes. Remove and book.
- Add the whites of green onions and pepper and cook until vegetables soften, about 3 minutes, then add corn grains and Lima.
- Cook for 3 to 4 minutes, stirring, until corn is slightly grilled.
- Turn down the low heat, season vegetables with salt and pepper, then add half-half.
- Simmer slowly until most of the liquid has evaporated and coats vegetables, about 3 minutes.
- Stir in bacon leaves and green onions.
