Serve 4

You will need

1 tablespoon of olive oil
1 small onion, chopped
2 cups of mushrooms, sliced
4 slices of Canadian bacon or Deli ham, cut in fine bands
1/2 (10 oz) Frozen spinach bags, thawed
1/2 (7 oz) can grill green chiles
Black salt and pepper
4 eggs

How to do it

  1. Preheat the oven to 375 ° F.
  2. Heat the oil in a large pan on medium heat.
  3. Add the onion and cook for about 3 minutes until translucent.
  4. Add mushrooms and cook for about 5 minutes until lightly brown.
  5. Incorporate bacon, spinach and chairs and cook for a few minutes until spinach are heated.
  6. If the spinach water accumulates in the pan, drain thoroughly.
  7. Season with salt and pepper.
  8. Divide the mixture from 4 oven oven safety ramekins that were slightly greased with butter.
  9. Carefully crack an egg in each, making sure to keep the yellows intact.
  10. Place the RameKins in a pastry dish and cook cooking until the whites are just going to bed, but the yellows are still flowing, about 10 minutes.

Eat

Mix one of these in the oven when you wake up, and it will be ready to eat when you get out of the shower. Keep it fresh and exciting by changing the support ingredients as often as possible (or simply use it as an excuse to get rid of vegetables, cold cuts and sitting cheeses in your refrigerator). Inventing at will, but take these ideas of inspiration:

  • Remains of chicken, salsa verde and feta crumbled
  • Chile, dice silly and cheddar
  • Chopped fresh herbs (parsley, thyme, rosemary) and splashing cream
