Eggs are one of Brazilians' favorite sources of protein, and can make up the most varied dishes, whether for breakfast or lunch. Being perishable foods, eggs are often stored in the refrigerator until their consumption, and even a compartment dedicated to them on the doors of many of these appliances.
Many people store eggs in this basket that fits the refrigerator door shelf, and ensure that it is very useful for egg eggs easily and seeing when they are about to end. However, the refrigerator door is not the best place to store this food, and let's explain why.
Why not store eggs on the refrigerator door
Uncooked eggs need to be kept at a temperature of approximately 4ºC, and the refrigerator door does not always reach this temperature. Since the door is usually open and closed frequently, it is the hottest zone of a refrigerator, with the largest temperature variations and this does not favor the storage of a delicate food as the egg.
Because of this, the ideal zone for storing eggs is the innermost part of the refrigerator, in a lower shelf, where temperatures are more stable and lower. Thus, you ensure that eggs will not spoil and prevent contamination by bacteria. In addition, it is recommended to keep eggs in a closed package, such as the one it originally comes to prevent eggs from absorbing the odors of the refrigerator and to ensure that they maintain a consistent moisture even after some time of storage.
How long the eggs last in the refrigerator
According to the American Egg Board website, the time an egg can last in the refrigerator depends on the state they are in. For example, eggs still in the shell can be kept in refrigeration for 4 or 5 weeks after the packing date or about 3 weeks after purchase.
However, if you broke the egg and want to store it raw in the refrigerator to use another time, it must be moved, and then it can be stored in an airtight container for up to 2 days. The raw egg white lasts up to 4 days in the refrigerator, while the yolk lasts up to 2 days. If you want to advance meal preparation, boiled eggs can be stored, still in the shell, for up to a week in the refrigerator.
And in the freezer?
If you have a lot of eggs at home and believe you will not be able to consume everything in a few weeks, you can freeze them out of the shell to make recipes in the future. Freeze only clean and fresh eggs, breaking them and placing in labeled airtight pots with the date and amount of eggs.
It is noteworthy that, as the consistency of the raw egg can change when it is frozen, it is possible to avoid adding some salt or sugar, depending on the recipe that will be made, and mixing well. Both entire eggs and egg whites or gems can be stored outside the peel in the freezer for up to 3 months. It is not recommended to freeze boiled eggs as consistency can be widely affected in the process.
Cooking with frozen eggs
To cook with the eggs that were frozen, just let them defrost for a few hours in the refrigerator or place the frozen pot under running water for a few minutes. Once they defrost, you can use them in your recipes (it is important that they are recipes where these eggs will be cooked).
Two tablespoons of checkered egg whites are equivalent to the white egg white, while a tablespoon of thawed yolk is equivalent to the gem of a large egg. To replace an integer egg on a recipe, use three tablespoons of a thawed egg.
