Gnocchi vegetarian pesto with green beans and tomato recipe

1/2 cup of pesto
1 cup of fresh mozzarella bite cubes
Parmesan freshly grated

How to do it

  1. Define a large pot of water on the high heat. Heat a large skillet or a pan with medium heat.
  2. Add the olive oil and green beans to the pan and cook for 3 minutes, then mix in the tomatoes and continue cooking until the green beans are tender (but still crisp) and tomatoes are browned outside. Remove from heat.
  3. Salt water after reaching boiling.
  4. Remove the gnocchi and cook until they float on the surface (4 to 5 minutes).
  5. Drain and add the gnocchi to the pan with green beans and tomatoes. Stir in the pesto and mozzarella.
  6. Divide between 4 hotplates or hot bowls and high with a little grated parmesan.
