Gnocchi vegetarian pesto with green beans and tomato recipe

1 tablespoon of olive oil
1 lb green beans
1-pint of cherry tomatoes

1/2 cup of pesto
1 cup of fresh mozzarella bite cubes
Parmesan freshly grated
How to do it
- Define a large pot of water on the high heat. Heat a large skillet or a pan with medium heat.
- Add the olive oil and green beans to the pan and cook for 3 minutes, then mix in the tomatoes and continue cooking until the green beans are tender (but still crisp) and tomatoes are browned outside. Remove from heat.
- Salt water after reaching boiling.
- Remove the gnocchi and cook until they float on the surface (4 to 5 minutes).
- Drain and add the gnocchi to the pan with green beans and tomatoes. Stir in the pesto and mozzarella.
- Divide between 4 hotplates or hot bowls and high with a little grated parmesan.
