The reason for the color of egg yolks

In order to better understand the subject, I spoke with two different registered dietitians on egg yolks to find out if it is really healthier to eat darker egg yolks and what consumers should know.

Why egg yolks can be different colors

"The color of the yellow can actually tell you a good deal on the nutritional content of the egg," saysVanessa Rissetto MS, RD, CDN and co-founder ofCulina Health. "In general, you want your yellow to be a dark and dynamic orange color. These yellows are typically produced by chickens raised by pastures whose diets consist of fresh grass, worms and grasshoppers. This diet is rich in carotenoids, which gives the yellows the rich orange color. "

"Some studies show that darker and more colorful egg yolks, especially grazing elevated chickens, may have more omega-3s and vitamins due to more natural foods than chickens eat," says Rachel Paul , PhD, RD ofCOLLEGENUTIENTIONRIONISTIST.COM. Studies also show that the incorporation of chia seeds into the diet of the hen will also result in a darker yellow.

Rissetto also emphasizes that the color of the yellows can actually taste differently! She points out that some leaders even say that deeper yellows (like orange yellow) will probably have the "more vibrant flavor" compared to the lightest.

However, while some chickens fear on a good diet, others do not include so many robust foods, which causes a lighter yellow.

"If yellow is light yellow, these chickens were probably fed a vegetarian diet composed of corn and wheat," says Rissetto.

Even if the darker yellows provide rich nutrients for consumers, this does not mean the nutritional value of egg changes at all. In fact, according to Paul, the yellow will always provide the same amount ofprotein andfat, no matter the color.

"Although the nutritional value of the egg does not change significantly based on the color of the yellow, it is an excellent health indicator of mother Hen," says Rissetto.

So, even if the protein and fat content remains the same, regardless of the type of egg, if you end up cracking an egg with an orange yellow, prepare at an extra boost of nutrients in your food!
