The ingredients

The ingredients for 4 portions are: half a kilo of white onions, 750 ml of milk and 75 g of butter. An abundant handful of Gruviera type cheese, three slices of rustic bread, a pinch of salt, pepper to taste.

The procedure

First cut the onions very thin - you can also slice them with a mandolin - and put them aside. In a large pot, pour the milk, then add the onions, half of the butter and a pinch of salt. Cook over moderate heat for about 30 minutes. If you use the pressure cooker, a dozen will be enough.

Meanwhile, heat a pan, cut the diced bread and toast it with the remaining butter.

After cooking the soup, use an immersion mixer to make everything more creamy. If you need, season with salt. Serve in your favorite soup dishes, add the cheese and the croutons. The pepper if you like. If you like, you can use a sprig of rosemary for decorated.
