Butternut Carbonara jumping

The combination of spicy pancetta, sage and butternut squash is a delectable combination that is difficult to resist. Serves 6

Ingredients

8 oz. PANCETTA, cute cut
1/4 cup of fresh sage leaves, grossly chopped
1 cup of yellow onion cut into diced
4 garlic cloves, minced
1 cup of cashew milk
1 1/2 c. Freshly squeezed lemon juice tea
1 C. Fine Sea Salt Tea
1/4 c. Freshly ground black pepper
2 egg yolks
2 tablespoons Ghee or coconut oil
3 Butternut Squash Squash
1/4 cup of nuts, grilled and roughly chopped

How to do it

  1. Heat a stock on average heat. Add the pancetta and cook for 8 minutes, then add the sage sheets and continue to comb it for 2 to 3 minutes until the pancetta and sage and are crisp. Use a slit spoon to transfer to a plate, leaving fat in the pot.
  2. Return the jar to the range over medium heat, add the onion and garlic and jump for 3 to 5 minutes, until garlic is grilled and the onion is translucent. Add the cashew milk and boil. Reduce medium-weak heat and simmer for 10 minutes or until the onion is mild.
  3. Transfer the mixture to a mixer and add the lemon juice, salt and pepper. Mix up for 30 seconds. Add the egg yolks and mix again for 15 seconds.
  4. Remove the bulbous part of the squash and save it for another use. Peel the long thin neck of squash in two in the direction of length, so that two pieces of about 3 inches long.
  5. Use a spiralizer and larger noodle blade, or a Slicer Julienne, to create noodles.
  6. Wipe the pot and go back to the stove over medium heat. Add the Ghee and Butternault noodles and jumped for 5 minutes. Return the pot sauce and cook for 5 minutes more, or until noodles are chick.
  7. Divide between the service bowls and the top with the pancetta, sage and crispy nuts.
