Churrasco skewers with chemichurri sauce

Ingredients

For Argentine style churrasco skewers

2 LB Steak Skirt or Flank Steak, Coupe against grain in 12 bands about 2 inches wide and 6 inches long
1 C. kosher salt
1 C. Black pepper freshly ground
2 tablespoons. olive oil
6 garlic cloves, finely chopped
Juice of 2 limits
Juice of 2 lemons
Juice
2 tsp. hot smoked paprika (smoky pepper of vera, if available)
2 tsp. cumin powder
12 bamboo sleeves, tempered 2 hours
Neutral oil like canola for oil grid grids
Cherry tomatoes, dice squash and dice aubergine, if desired
Chemichurri sauce

For chemichurri sauce

1 cup of fresh parsley slightly packaged, finely chopped
3 cloves of garlic, finely chopped
2 tablespoons. shallot finely minced
1 C. salt
1/2 TSER. Black pepper freshly ground
1/2 TSP. Red powder peppers
3 c. Xerery vinegar
1 lemon juice
1 C. Dijon's mustard
1/2 TSER. my dear
3/4 cup of fruity fruity extra virgin olive oil

How to do it

  1. Chemichurri, in a medium bowl, whisk all the ingredients except the oil. Stay sitting for 5 minutes.
    Whisk slowly into the oil until the sauce is slightly emulsified. Season with extra salt, if necessary.
  2. Make Skewers of Argentine Style ChurrascoIn a shallow dish carried beef and seasonal bands with salt and pepper. In a small bowl, mix the olive oil, garlic, fruit juices, paprika and cumin; Pour the beef strips. Cover and marinate in the refrigerator for about 2 hours.
  3. Thread each beef strip in the direction of length on a skewer. If desired, also add vegetables to the skewer. Leave to sit at room temperature for 30 minutes.
