This combination of sweet and spicy Taco is the ideal way to mix Taco Tuesday!
When I visited Austin, Texas last year I consumed an absurd amount ofTacos. Especially breakfast tacos, which have potato bits! As I am a Fangirl of all kinds of tacos, I was particularly surprised by this combination. Pieces of potato tacos-really?
To my total surprise, the tacos with the potato are absolutely delicious and I am a little shocked, I never thought there. They are the load of perfect vegetables when you do not want to pack your Taco with lots of meat. They are also an excellent option for those looking for a vegetarian taco!
As I asked Taco recipes, I knew I had to think of a kind of taco with potato. When I thought made a recipe of potatoes and chorizo taco, it was logical to useYam rather than a regular white potato. To have salty, spicy chorizo with the sweetness of a sweet potato seemed to be the perfect combination for me and boy, I was just about it.
