How to do it

  1. Preheat the oven to 200ºF. In a large bowl, whip flour, collagen, sweetener (if you use), cooking powder and salt, taking care to break the lumps. In a small bowl, whisk eggs, cream, oil and vinegar to well mixed mix. Incorporate the egg mixture into the flour mixture, mix well.
  2. Heat a heating plate or large pan over medium-low heat. Brush with GHEE or oil. Remove the 3-spoonful pancake paste and cook until golden on the bottom, about 2 to 3 minutes. Return and cook carefully until gold on the other side and cooked through about 1 minute more. Transfer to a plate or baked plate and hold it in the oven while you cook remaining pancakes.
