Crock-pot enchiladas chicken recipe saucepan

Ingredients

1 20 ounces of enchilada sauce
1 lb chicken breast without skin, diced
1 15 ounces can sweet corn, drained
1 15 ounces black beans, drained
1 green pepper, seeded and dice cut
1 red pepper, seeded and dice cut
1 medium onion, diced
1 cup grated taco cheese
10 tortillas, cut into strips

How to do it

  1. Add the chicken in the slow cooker and season with salt and pepper.
  2. Add the black beans, sweet corn, peppers and onion in the slow cooker as well.
  3. Pour the enchilada sauce on top. Mix the ingredients to make sure they are distributed evenly.
  4. Turn the slow cooker at high temperature for 4 hours or weak for 8 hours.
  5. During the last hour, add the torilla strips, then sprinkle on Taco cheese.

Eating this! advice

Freeze this meal and save it for later! Add the chicken, enchilada sauce, sweet corn, peppers cut into dice and onion in a gallon freeze bag. Make sure to thaw the meal in the refrigerator 24 hours before putting it in the slow cooker. Mix the ingredients so that they are uniformly distributed before putting the slow cooker.
