To reach this discovery, the researchers recruited ten healthy adults to test fresh white bread that has undergone a gel, then a defrosting, fencer mesh or grilled after freezing and defrosting. Spring blood samples were taken before the participants ate bread and 15, 30, 45, 60, 90 and 120 minutes after the start to eat. The researchers found that, while the three storage and preparation conditions reduced the glycemic index of bread, the mesh after freezing and defrosting the minimized blood glucose of sugar spikes in the most blood.
