A healthy catch on the classic burrito

The ideal dish for when the desire for Mexican food strikes.

1 large onion, sliced
1 red pepper, sliced
1 Poblano or green pepper, sliced
Black salt and pepper
1/2 Box of black beans (14-16OZ), drained
1/4 c. Cumin
Juice of 1 lime
Hot sauce
4 Whole wheat tortillas (10 ")
1 cup cheese vector shredded low in fat
2 shredded chicken cups (about half a chicken from shop purchased)
Salsa (salsa verde is particularly good here)

How to do it

  1. Heat the oil in a large stove over high heat.
  2. Add the onion and red and poblano peppers and cook until brown, about 7 to 8 minutes. Season with salt and pepper.
  3. Combine beans with cumin in a saucepan and warm. Add the lime juice and some hot sauce shakes.
  4. Preheat a heating plate,cast iron, or large nonstick skillet on average heat.
  5. Microwave the tortillas for 20 seconds, just enough, they are flexible.
  6. Building a burrito at a time, sprinkle on cheese, garnished with beans, onion-pepper mixture, chicken and salsa.
  7. Roll in a tight package.
  8. Place the burritos directly on the pan, cook for a minute on each side until slightly grilled.
