Asian health soba noodle soup

Healthy soup gets an Asian touch with this Noodly Bok Choy Fest.


The healthy soup gets an Asian touch with the help of soba noodles, vegetables like the bok choloy and carrots, and a hint of Tamari umami (which is the healthy aficionado slang for healthy soy sauce). He is compliments of our friendsThe Fitchen.

Ingredients:

6 ounces. Soba noodles
1 medium onion [chopped]
3 tablespoons olive oil
24 oz Vegetable Broth
3 Chinese cabbage [separated, washed, and cut half long)
1 teaspoon of sea salt
3 tablespoon Tamari sauce
2 average carrots [thin slices]
4 cloves of garlic [chopped]
½ teaspoon Cayenne

How to do it


Step 1:

In a medium saucepan, bring 3 cups of water to a boil. Add a pinch of Soba salt and noodles. Boil for 5-7 minutes. Drain the noodles and set aside.

2nd step:

In a large saucepan, brown onions and garlic in the oil.
Add broth, tamari, carrots, bok choloy, noodles and seasonings to the pan with onions and garlic.

Step 3:

Bring the pot to a boil, cover and simmer for 15-20 minutes. Enjoy!
