1 cup cooked barley or farro

1/4 cup chopped walnuts, toasted

How to do it

  1. In a small bowl, combine the buttermilk, mayonnaise, chives, lemon juice, salt and pepper. Whisk until smooth.
  2. Divide among four jars of beets to sting.
  3. Top with rocket, salad dressing, eggs, barley, goat cheese and walnuts.
  4. Cover and cool up to 3 days.
