Although Mitchell's body may have changed dramatically over the past year, she has not been spartan from her diet.

"I would like to be able to say that it was all quinoa, salmon and asparagus, but it's not," she admitted toWomen's health. Instead, she says she eats an egg, spinach and cheese quesadilla for breakfast, lunch soup and a mix of vegetables and carbohydrates for dinner. Throughout the day, she snacks on fruits, cheese, vegetables and treated with wine, lily chocolate almonds or caramel chocolate cookies.
