"A warmer day can seriously damage a young soft plant or plant at the breeding phase when heat-sensitive flower fabrics develop," says Colleen Doherty, an associate professor of molecular and structural biochemistry in college. "However, a major aspect of climate change, at least from the point of view of beer production, is that nights warm up faster than days."
The plants save some growth for when it is cooler, says Doherty, which makes the night once perfect. But if the night is warmer, plants can not follow their new schedule.
The iconic odors and the tastes of plants in beer are results of the changing compounds during the brewing process. But these chemicals are first made when the plant is still growing. If the temperature is too hot day and night, the plant can not say when it is supposed to make these changes.
No evidence has yet been found as to beer that can be different. But Doherty says that NC status scientists continue to follow developments.
