You probably do not want to have rum with a weekday breakfast, but that does not mean you can not enjoy apaleo Piña Colada Smoothie of Am. Gives 1 serving, as well as the extra whipped cream of coconut

Ingredients

1 cup of fresh pineapple, cut into 1/2 inch pieces, frozen for at least 2 hours
1/2 cup of canned coconut milk well shaken
1 tablespoon of fresh lime juice
1/2 date of MEDJOOL
Fresh cherries, for filling

How to do it

  1. Combine frozen pineapple, coconut milk, lime juice and date in a blender and mashed up to softness.
  2. Pour into a glass and a high with fresh cherries (and a cocktail umbrella if you wish).
