Spicy Waspy Cabbage Browns
Crisp and healthy can indeed be one and the same.
Make brown hash on awaffle iron is a non-traditional (and ingenious) use for this kitchen tool. The waffle cook chopper brown with crispy corners and crannies that make the perfect crunch.

Ingredients
4 cups of cauliflower cabbage
1 1/4 Mixing mug of shredded Mexican cheeses
1/2 cup bleached almond flour
1/2 onion, grated
1/2 cup of fresh or frozen and thawed corn kernels
1/4 cup of leaves of fresh chopped coriids
2 large eggs
1 Jalapeño (seeds and rods removed), finely chopped
1 C. Cooking powder
1 CUXTE MOULU CUMIN
1/2 c. Smoked paprika tea
1/4 TSP Chipotle Powder Powder
1/4 c. Sea salt tea
1/4 c. Freshly ground black pepper
Melted butter, to grease the waffle of iron and pan
OPTIONAL TOPLINGS:
6 big eggs
1 lawyer, sliced
Cilantro leaves, for filling
Ketchup, to serve
Salsa, to serve
Sour cream, to serve
Black beans, to serve
How to do it
- Preheat the waffle. Preheat the oven at its lowest temperature to keep the brown chopped warm when working through the dough.
- Bring a thumb of water to a boil in a medium saucepan. Place the cauliflower in a steam basket on boiling water. Cover and steam the florets for 5 minutes, until I drilled easily with a fork. Transfer the florets to a culinary robot and process up to a minced one meal.
- Transfer the meal to a sleek and thin dish towel or a piece of cheese. Let cool. Working on the sink, pull the corners of the towel together and take out the excess liquid. Place the meal in a big bowl.
- Add 1 cup of cheese, almond flour, onion, corn, coriander, eggs, jalapeño, cooking powder, cumin, paprika, pepper powder, salt and pepper in the bowl. Stir together until well combined.
- Brush with embossed iron with melted butter to grease it completely. Scoop 1/2 cup of chopped brown mixing in the iron, extending it to a uniform layer. Close the iron and cook for 7 to 10 minutes or until the waffle iron light indicates that the hash bridges are cooked through and they are golden and crisp on the outside. Transfer to a cooking sheet and continue in the oven while you cook the remaining hash browns.
- Although the last of the chopped chopped brown, heat a tablespoon of butter in a pan with medium-high heat and the crack of some eggs in the pan. Cook eggs for 5 minutes, until the edges are a little crisp, the whites are placed and the yellows are still cast. Repeat until all eggs are cooked.
- Serve each brown hash with an egg on the dish, a few tranches of lawyer and the remaining cheese. Garnish with Cilantro. Consider offering Ketchup, salsa, sour cream and black beans like additional fittings.
