1/2 cup butter, softened
1/2 cup of sugar, separate

In a large bowl or an electric support mixer, whisk together the softening butter, 1/4 cup sugar, brown sugar, egg and vanilla extract. Once the ingredients are all mixed, add it to the dry ingredients mixed in a smaller bowl. When thecookie dough is combined, wrapped in a plastic film and place it in the refrigerator for 3 to 4 hours, or a night.

When you are ready to cook the cookies, take the dough out of the refrigerator and let it sit for a few minutes before separating. In a small bowl, mix the other 1/4 cup of sugar together with the 1 tablespoon of cinnamon. Roll the biscuits paste into 1 inch balls and using a spoon, drop the cookie balls in cinnamon sugar and cover them. Place a cooktop lined with parchment paper.
Cook for 8 to 10 minutes
Cook cookies at 350 degrees for 8 to 10 minutes. Cookies will rise a little and create this beautiful texture "pillow" that snickerdoodles are known for. To keep their shape perfect, let the cookies cool on the tray for a few minutes (about 3 or 4) before transferring to a plate.
