Ingredients
1 middle-sized mature lawyer (about 7 ½ oz)
1 C. Lemon zest tea
3 c. Soup of lemon juice
2 c. Chopped fresh parsley
2 coconut coco d'aminos
2 tablespoons extra virgin olive oil
1 tablespoon of cider vinegar
The water
1/4 to 1/2 c. TSP raw honey, optional
Fine salt and black pepper freshly ground
1 English cucumber (about 12 oz), cut into 24 slices
Wild salmon smoked 6 oz, cut into small pieces
4 c. From all Bagel Spice Mix
How to do it
- Make the sauce: In a culinary robot or a high-speed mixer, combine the lawyer, lemon zest and juice, parsley, coconut aminos, olive oil and vinegar. Mix up smoothly, stopping for scratching the sides of the bowl or mixer as needed. Mix in water 1 tablespoon at a time until the desired consistency. Taste and mix with honey, if necessary. Season with salt and pepper. (Yield: about 1 cup)
- Spread about 2 tablespoons sauce on each of the 4 plates. Place 6 slices of cucumber on each; Divide salmon to the slices. Sprinkle with all that all blank the spice mix and serve.
To note: It is rather unusual to have honey in a recipe of Keto, but it is such a quantity, it will not move the needle (but it provides the balance of the needs of the sauce). There are about 17 grams of carbohydrates in 1 tablespoon of honey, and this is at most ½ teaspoon, which adds less than 3 grams of carbohydrates, even if you have eaten the whole lot.
