Veggie Scramble Mushroom, Spinach and Goat Cheese Recipe
You can break this meal for breakfast or even a plate of dinner!
Skillfully scrambled eggs are a tasty delight themselves, but taking the next step and fold some supporting players, you accomplish two goals: First, you make it simplebreakfast Suddenly the taste and feel like something special. This veggie scramble is a good meal, so healthy and filling you could even do as a side dish for dinner too.

Serve 4
You will need
1 1/2 c butter
1 cup shiitake mushrooms, sliced
1 cup frozen spinach, thawed
Black salt and pepper
8 eggs
2 c 2% milk
1/2 cup freshgoat cheese
How to do it
- Heat 1 tablespoon butter in a large non-stick pan over medium heat.
- When bubbles, add the shiitake mushrooms and cook for about 5 minutes, until lightly browned.
- Remove and set aside on a plate.
- In the same pan, sauté the spinach until hot throughout.
- Season with salt and pepper. Transfer to a colander and squeeze out excess water.
- Mix the eggs and milk in a large bowl. Season with salt and whisk well.
- Add butter 1/2 teaspoon remaining soup in the pan, turn the heat to low and add eggs.
- Use a wooden spoon to stir the eggs constantly, scraping the bottom of the pan to create small delicate curds.
- Continue stirring in this way for about 5 minutes until the eggs are still very soft and loose. Add mushrooms, spinach and goat cheese and cook for about 2 minutes.
- Season to taste with black pepper.
