How to do it

  1. Heat the olive oil in a large saucepan or a medium heat pot.
  2. Add the celery, onion, carrots and garlic and jumped for about 5 minutes, until the vegetables are mild.
  3. Add water or stock, potatoes, ham jarret, split peas and bay leaves.
  4. Turn heat down and simmer for about 40 minutes, until the peas are turning very soft and begin to lose their shape, leaving you a thick soup. (Slim with more water or stock if you prefer a thinner consistency.)
  5. Remove the ham jarret, shred the crouched meat to the bone and add to the soup.
  6. Discard the leaves of the bay.
  7. Season with salt and pepper, plus some tabasco shakes, if you like.

Eat
