SnickerDoodle Mini Protein Muffins

The muffins always seem too mild of a treat to enjoy the morning - especially because most of the muffins you find in bakeries or on grocery shelves are loaded with sugar. Instead, enjoy these mini snickerdooodle mini muffins that are naturally sweet with dates and pumped with herbal proteins!You can enjoy three of these mini-muffins for a portion, and they really go well with your morning java cup.

Serves 6 (18 mini muffins)

Ingredients

3/4 cupVanilla tone it up protein
3/4 cup of almond meal
2 tsp. cinnamon
1 C. chemical yeast
1/4 TSP. salt
1 egg
1 C. vanilla extract
1/2 cup of dates, quenched and soaked in lukewarm water to soften
3/4 cup of unsweetened almond milk
1 pure banana
Coconut oil spray

How to do it

  1. Preheat the oven to 350 degrees.
  2. Combine all dry ingredients in a bowl.
  3. Combine all wet ingredients, including dates, in a mixer and mix until softness. Add wet ingredients to dry ingredients and mix to combine.
  4. Spray a mini-muffin mold with a coconut oil spray. Pour the dough into the muffin boxes.
  5. Cook for 20-25 minutes or until a toothpick is clean.
  6. Top with a small pinch of cinnamon.
