How to cook a disgusting yogurt at home
To blame in the morning tasty and useful for digestion, but with a helmet yogurt already no problem. Of course, you can buy already ready-made products in the store, but much safer and more economically cooking it.
Even literally 10 years ago, order in Ukrainian cafes, rectangular milk to coffee would be a very strange phenomenon. It is unlikely that anyone would understand what is the language. However, now this phrase will not surprise anyone. The sale has enough alternatives to traditional milk: almonds, soya, oatmeal, rice, coconut. And they are quite popular among consumers.
Nobel Laureate - Physiologist Ivan Pavlov, known by love for cow's milk, called him "food prepared by nature." He started with a glass of milk every day and lived 86 years. However, such practices will not be equally useful to everyone. According to various studies, the planet has 37% to 70% of people with lactose intolerance. So lactose is the so-called "complex sugar" or disaccharide, it is also called "milky sugar". For assimilation of the molecule of lactose of the body, it is necessary to split it on glucose and galactose with the enzyme of lactase. In a sufficient amount, it is approximately 30% of the adult population, the rest will stop it producing under 4 years of age. So when in the absence of a sufficient amount of enzyme, the lactose enters the intestine, it causes a violation in its work and fermentation processes. Meteorism, diarrhea, heaviness in the intestine - signs that you have intolerance of lactose. In addition, there are also people with allergies to lactose, that is, an enzyme for its cleavage is enough, but immunity gives an aggressive response to substance in the body. This often occurs in children through feeding mixtures instead of breastfeeding. Then, this effect of the rejection of a foreign protein is fixed in a child for all a further life in the form of an allergy. This condition is much more dangerous for lactose intolerance, because as each allergy may have a severe course. In addition to all of the above-mentioned lactose problems, vegetarians, which in principle do not use products of animal origin.
For all these people, alternatives to traditional milk - its vegetable analogues - are simply indispensable both in conventional form and in the form of dairy products. For example, to fight in the morning delicious and useful for digestion, but with a lack of helmet yogurt there is no problem. Of course, you can buy already ready-made products in the store, but much safer and more economically cooking it.
So that you need to:
- Vegetable milk (almond, soy, oatmeal, rice, coconut), depending on your taste and budget
- Yogurt leaven (freely sold in supermarkets). The calculation will be approximately as follows: 1 packet of powder leaven for 1 liter of milk (see Packing instructions)
There are two ways to prepare a disgusting yogurt:
- If you have a multivark: pour milk into a container, set the heating temperature to 80 degrees (pasteurization), allow to cool to 35-40 degrees, sleep leaven, fine, turn on the yogurt mode, or simply "heating" on 7- 8 hours. In the case of the "Heating" regime, make sure the temperature does not exceed 40 degrees. It is also important to keep yogurt over 8 hours. In cow's milk, usually hold 12 hours, but if we exceed more than 8 hours on a diskay, then the yogurt will be very sour. Ready yogurt Spill on glass jars and put in a refrigerator. You can immediately add jam or honey to taste.
- If Multivarks are not: Heat Milk in Pans Do not bring to a boil, allow to cool to 35-40 degrees (in the absence of a food thermometer, this temperature can be detected on the touch - when you are comfortable to dip your finger and do not want to pull out), pour out the leaven, mix , pour a mixture of glass jars, cover them with lids (do not twist!), Place the jars in a large pan, fill it with hot water from under the tap (calculate the size of the jar so that the water in the pan closes them to a place where there is milk, but Did not fall inside), quickly cover the pan with a lid, put on a large terry canoper and neatly score the casing, covered with two more tartens, or outdoor, leave to 7-8 hours. Ready yogurt hide in the refrigerator. It is not desirable to keep a non-helmet yogurt in the refrigerator for more than 3 days.
Bonus will tell you an economical recipe of yogurt without any milk and leaven. This requires 1 liter of water, 200 gr. oat flakes and 200 gr. oatmeal. Rinse flakes and cereals, fill all with water and leave for the night (if you see that water is insulated, then add it). Then the mixture should be crushed in a blender, poured into glass dishes, cover gauze and leave for 2-3 days for fermentation. Mixture periodically stir.
