Borscht
It is called Borsch or even Borscht and is a typical soup of all the cuisine of Eastern Europe. It is based on beets and, even if there are so many versions, the most widespread is the vegetarian one. Think that for the Poles is the typical dish of the Christmas night. You can enrich it as you like, with mushrooms, simple pasta, stuffed pasta and give that extra touch with some sprig of fennel.
Velvet of purple cabbage
Take a hood cabbage, a bounty onion, a few tablespoons of rice starch or a spreader potato and cheese. After finely cut cabbage and onion, brown all in a large pan, cover with vegetable broth and cook. When the cabbage I will be cooked, you can blend and season with the cheese, a sprig of thyme and a very light oil of oil. You will have a real delight in the dish!
Velvet of sweet and chickpea potatoes
If you want to take the colors and flavors of cold seasons to the table this is the perfect soup! Two sweet potatoes to be grated, a tablespoon of extra virgin olive oil or even coconut oil, an onion, some spice, a spoonful of sesame cream and vegetable broth. Complete the plate with a handful of toasted chickpeas, some strip of cabbage or red radicchio and a mint leaf.
Beetroot soup
A red beet, a potato and some carrot, half onion, vegetable broth, salt, pepper and a handful of parsley. You will get a creamy, tasty and colored soup rich in vitamins and antioxidants. It has a very simple preparation that you can also enrich with pork, veal or, if you prefer, with chicken morsels.
Cold soup at the avocado
Take a mature avocado and a poor pier of peas, a tomato, ½ liter of vegetable broth, salt, pepper, a little oil, a few drops of lemon and some mint leaves. A small tip: after cooking the peas in boiling water, immediately put them in a bowl with frozen water, in this way you will preserve their brilliant color even after having smoothed them. Once the peas smoothie has been ready, add the other ingredients and mix everything.
Fruit soup
If instead, despite the cold, you want a fresh and out of the ordinary soup, try the fruit soup. Replace the broth with an infusion of fruit and sugar to prepare the day before, a few season fruit cut into cubes. Put the fruit bowl, cover it with you and add a ginger curl and a few drops of olive oil.
Gazpacho at yogurt
A vegetable soup so simple yet always fashionable. Gazpacho is a dish that is good for every season. Tomatoes, celery, chives, a pepper, some sprig of fennel and a cubed cucletino. Chop all the vegetables, add some chili pepper to heat everything and a couple of white yogurt tablespoons, salt and just a few drops of vinegar. It will be a flavor explosion you will not forget!
Okrowska
Middle calf meat, 3 boiled eggs, vegetable broth, cucumbers, radishes, potatoes, raphanes, dill and chives. Okrowska is a dish complete with meat, vegetables and spices. The kefir and the sour cream complete the picture. You can add if you like, some black bread crouton to add crunchy to your hot dish.
Curry almond soup
There is a winter version and a summer's almond soup in the curry. To give consistency it will be the stale bread to be put back without the crust and the almonds blend together with a little oil, a pinch of salt and a clove of garlic. Continue to blend everything by adding a teaspoon of vinegar and a sprinkling of curry. Finally decorate the dish with some toasted almond.
